The tender and sweet burgundy florets of Santee can be eaten raw or cooked and are great for bunching, stir fry and as a pizza topping. High yielding, florets can be harvested over a long time frame. It performs and tastes best during cooler months and can be sown late spring through fall for harvest throughout the fall, winter and spring. In northern locations it will overwinter in high tunnels when planted in August and then yield from the end of February until early summer.
